I've lost all sense of the days. So when I saw an email reminder for the February Recipe Swap happening today I nearly fell out of bed. I was sure I had another week to play in the kitchen. Nope, turns out I had about 5 hours. ACK! This swap was to remake a wild rice salad. I sat stunned for a moment holding my coffee cup exactly 1 inch a way from my lips. The intoxicating smell snapped me out of my trance. There is always wild rice in my pantry thanks to my Minnesota connections. Hundred of wild rice salad variations have made their way through my kitchen...but I was feeling this recipe needed to be more just a salad. Savory pancakes came to mind as a wave of long forgotten creativity waved over me; then a moment of remembrance brought the whole dish home. Just a few weeks ago we were battling to reel in beautiful Dorado (Mahi Mahi) while deep sea fishing in Cabo San Lucas. We grilled our catch for our group as a celebratory dinner on our last night; luckily we had one of the largest catches smoked to bring home with us. Hey guys. It?s Chris again guest blogging about these delicious Mahi Mahi tacos I made. Amy usually cooks every day and she?s such a good cook that I usually just sit back and enjoy the meals. The other day I realized that I hadn?t cooked anything in a while and I decided to go with something that I?ve cooked before, which are fish tacos. We?ve had good and bad experiences with making fish tacos and we?ve found that the best experiences are when we use Mahi Mahi. I found a great dry rub recipe online for the fish and also used the leftover spices from the dry rub to make a spicy sour cream. Try this recipe and you?ll be hooked! Printable Recipe Ingredients Fish seasoning: 1 tbsp. paprika 1 tsp. garlic powder 1 tsp. onion powder 1 tsp. dried oregano 1 tsp. dried thyme 1 tsp. kosher salt 1/2 tsp. freshly ground black pepper 1/4 tsp. cayenne pepper 1 1-pound Mahi-Mahi fillet Cheddar cheese, shredded Limes, for serving Crema: 1/2 cup sour cream 1 tbsp. leftover fish seasoning Build a medium-hot fire in a charcoal grill, or heat a gas grill to high. Combine all dried spices in a small bowl. Sprinkle over fish, reserving about 1 tablespoon. Brush grill grate with oil. Grill fish until cooked through, about 5 minutes per side. Using a fork, coarsely shred fish. Meanwhile, combine sour cream and reserved seasoning. Set aside. Fill tortillas with fish. Drizzle with crema. Squeeze fresh lime wedges over tacos and sprinkle with grated cheese ...
Living in I Florida I may have things thrown at me for saying this but?. c?mon Spring!!! ! I am tired of the cold weather. Hey ?..We get cold weather too. I don?t live in tropical Miami??.I live a few miles from the Georgia line?.. in the north part of Florida. It is not as advertised for Florida vacations with pristine beaches, a few thin and tanned couples sauntering down the almost empty beaches. Blue waters. A lonely bamboo type bar set up to order a Mai Tai or Bahama Mama. Monday we woke up to 28 F (-2 C) and frost on the field. AND a good breeze assaulting our tender faces. So yeah?I am so ready for Spring. Or a home in the Canary Islands for a few months would suit us as well. Food cheers me up. Just about every time. My feeling is, preparing meals you usually reserve for warm weather can boost your mood when the winter blues have you by the?.um??when it has you sad. Grilled fish with fried okra and fresh tomatoes are just the ticket. Doug starts the coals for the charcoal grill, cooks the fish to a beautifully bronzed and cross-hatched vision.......I fry okra and slice tomatoes. Maybe a Jimmy Buffet CD playing in the background. Why not. Simple meal, fairly light eating (despite the fried okra) makes for a relaxing evening. What is your go-to happy meal?
